I love Gjeost cheese! It is so good! I used to buy a chunk and my cat would sit on arm of recliner as I sliced pieces of it - yup, it was his favorite cheese too- he'd purr as soon as he saw it!

I just returned from a six day road trip in New Mexico, where I discovered my newest fave food indulgence. Are you ready? It's a chile relleno burrito! That's right, a Hatch Green Chile, stuffed with cheese, battered and deep fried, wrapped lovingly in a huge, homemade flour tortilla that's been spread with refried beans and sprinkled with cheese. The whole concoction is then smothered in red chile sauce. Yes, it is a belt buster and I love it!
