For years, I tried to mimic my mom's spaghetti sauce. I have since given up, but maintained some of the same basics: tomatoes, meat, garlic, onion, a bay leaf and of course wine!

My favorite pasta dish is orechetti with Brocolli. The sauce is made from fresh garlic, olive oil, parmesan cheese and a dash of red pepper flakes.

I love penne in a blush sauce with a little Italian sausage and mozarella cheese. The sauce is a wine based red sauce mixed with cheese. It is out of this world!

My favorite pasta dish is a classic shrimp scampi over angel hair pasta, yumm, now I will be thinking about that all day! But, my family would vote hands down that they love my homemade lasagna which is my grandmother's recipe and it is sinfully delish if I must say so myself! My favorite salad is a fuji apple and grilled chicken assorted italian greens salad that I mimmick from visiting Panera and I just add much more of everything to it when I make it at home. My favorite pasta dish has long been Capellini with very garlicky Shrimp Scampi (made with a very generous splash of Chardonney or Pinto Grigio. HOWEVER - my husband recently developed a (YIKES) mean allergy to Shellfish. While he still can eat Linguine with Clam Sauce (which we both love) our current favorite is pasta (any shape)with a Wine Gorgonzola Sauce, Chicken, Wild Mushrooms and a combo of wilted Spinach and Arugala (to go veggie you can skip the chicken - and also substitute broccoli/rapini or asparagus.) Serve with wine of your choice.
