a_century_of_flavorsVanilla has a bad rep for being plain and neutral, but real vanilla--and better yet, vanilla beans--is one of the most versatile and amazing flavors in a cook's toolbox. In the new Nielsen-Massey Vanilla cookbook A Century of Flavor, the company celebrates 100 years in business with a collection of recipes from Vanilla Cinnamon Apples to Creamy Vanilla Sweet Potatoes.

Enter to win A Century of Flavor--just leave a comment on the site with your favorite way to use vanilla in cooking or baking!

Congratulations to Susan of Quincy, FL, winner of When the Rivers Ran Red and Jason of Elko, MN, winner of the Wine Diapers.

Web find of the week: Red wine with fish? It's the iron, not the tannins, that make a bad match.

I love Vanilla! When I think of using beans, I think of making homemade kahulua, brandied cherries, or like ice cream! But, I'm also a fan of Vanilla lattes, or using vanilla in Spritz. The best vanilla though, is the real deal, and I often add more, because I really love the real vanilla flavor. Sometimes more than chocolate. Did I just say that? Yikes!

a few years ago I got some vanilla beans to try. We were amazed at the difference in taste. So now we try to use higher quality vanilla or vanilla beans. I don't bake as often as I used to, but it's nice to have the richer flavor. we also use it for making liquiors.

I use a generous amount of vanilla when making french toast!!! I love it! You really can't use too much! Also, FYI, vanilla works as a natural remedy for canker sores; just swab vanilla on the canker sore with a Q-tip and it heals by the next day!
